Sutherland artisan baker launches ‘pay as you can’ new loaf to make nutritious bread accessible to all





An artisan baker in Sutherland has launched an ‘affordable’ new loaf which is being sold on a ‘pay as you can’ basis.

Susan Wallace, founder of the award-winning Loaf Bread Company in Trantlemore, Strath Halladale, has launched her ‘People’s Bread’ in collaboration with Paul Barrett and Flora Mackay of West End Stores, Portskerra, and Scotland the Bread - an initiative to provide better grain and better bread.

Susan created her new loaf in response to Scotland the Bread’s call for bakers to come up with recipes and methods to create a People’s Bread - a nutritious, digestible bread easily available to everyone.

“In line with the criteria, the loaf is 100 per cent Scottish”, said Susan who uses high-quality, beremeal, oats and wheat grown by Scottish suppliers.

She said: “It is my version of an accessible loaf for those who can’t afford to buy artisan bread with the high cost of living. It is super nutritious and more than fits the bill for the People’s Bread as a nutritious, digestible loaf available to anyone who wants to to replace the week-day, ultra-processed bread.”

She added: “The loaves are being sold on a ‘pay what you can’ basis. Those who can, pay the recommended price or more while those who can’t, pay what they can. Other bakers who run these schemes say it all balances out.”

Loaf’s People’s Bread is available on a small batch basis at West End Stores (from 11am) and at Loaf Pop Up, 3 Princes Street, Thurso, on Saturdays, barring holidays.
